Tasty Tuesday: Not Your Average Garlic Knot
I don’t know about your children, but ours seem to arrive home from school every day FAMISHED. Once the “Welcome Home” kisses and hugs are passed out, the first question I hear is, “What can I have for snack, Mama?” I’m usually feeling pretty good when I can offer a piece of fruit or the occasional, fresh from the oven cookie because my most frequent response is, “Whatever’s out there!”. This day in particular, however, I wanted to offer them something just a little special. It was their last day of school before Winter Break. I knew they’d come home excited and ready to begin our vacay together. I also knew that with all of the “party-ing” done at school that day, they’d probably already reached their limits of overprocessed, sugar laden goodies. So I opted for a yummy, but more savory treat I’d seen on an episode of the Rachael Ray Show just the day before. The Not Your Average Garlic Knot had made her list of “The Top 10 Most Downloaded Recipes of 2012″. It won the hearts of my Chickens as well.
Ingredients:
- Cooking spray
- 4 tablespoons butter
- 2 cloves garlic, finely chopped
- 1 pound store-bought pizza dough, regular or whole wheat, cut into 1-inch balls
- 2 tablespoons rosemary, finely chopped
- Coarse ground sea salt
- Freshly ground black pepper
- 1 cup shredded provolone cheese, divided
- 1 cup grated Parmesan cheese, divided
- Marinara sauce, for dipping
Directions:
1. Pre-heat the oven to 400ºF.
2. Prepare a bundt pan with cooking spray. If you happen to need a bundt pan, Amazon has this cute one 33% off plus free shipping.
3. In a small saucepot, melt the butter with the garlic. Pour into a large mixing bowl and toss together with the pizza dough balls, rosemary, sea salt and black pepper. Place half of the dough balls into the bundt pan and top with half of the cheeses. Top with the remaining dough and finish with the remaining cheese. Bake for 30 minutes.
4. Serve with marinara sauce alongside.
